Coconut Pancakes: Gluten Free Dairy Free


Coconut Pancakes – Gluten Free, Dairy Free

4 eggs
1/4 cup coconut flour
1/4 tsp vanilla extract
1 pinch nutmeg
1 pinch cinnamon
1 pinch allspice
1 tbsp honey (raw, unpasteurized)
1/4 cup full fat coconut milk
(If you find batter thick, add a little coconut water)

Directions
Mix all ingredients and let them sit for 10 minutes.
Oil pan with coconut oil (or butter). Heat to medium heat.
Pour about 1.4 cup batter for each pancake. When brown on one wide flip to the other. Watch carefully to avoid burning.

I serve with Maple Syrup and fresh berries. Enjoy!
