Cauliflower Pizza Crust








Cauliflower Pizza Crust
This was delicious. From now on, I know when I have a pizza craving, I can have a cauliflower crust pizza and enjoy it every bit as much as a high calorie, high carb pizza.
I used the recipe from The Lucky Penny and changed a few things. Here you go!


Cauliflower Pizza Crust

(All organic ingredients where possible)
1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
1/4 teaspoon sea salt
1/2 teaspoon dried basil (crush it even more between your fingers)
1/2 teaspoon dried oregano (crust it even more between your fingers)
1/2 teaspoon garlic powder
optional a few shakes of crushed red pepper
1/4 cup shredded parmesan cheese
1/4 cup mozzarella cheese
1 egg (beaten)
optional 1 tablespoon almond meal or spelt flower

Desired amount of sauce, cheese for topping, and other toppings. 

Place a pizza stone* in the oven, or baking sheet if you don't have a pizza stone. Preheat oven to 450 degrees. On a cutting board, place a large piece of parchment paper and rub it with olive oil.

Wash and dry a cauliflower. Cut off the florets, you don't need much stem. (If you read my tip of the week #1 you will know what to do with the stem). Just stick with the florets for this recipe but don’t waste the stems. Pulse in your food processor for about 30 seconds, until you get powdery snow like cauliflower.. You should end up with 2 to 3 cups cauliflower. Place the cauliflower in a microwave safe bowl and cover. Microwave for 4 minutes. Dump cooked cauliflower onto a clean tea towel and allow to cool for a bit before attempting the next step.
Once cauliflower is cool enough to handle, wrap it up in the dish towel and ring it well. You want to squeeze out as much water as possible. This will ensure you get a chewy pizza like crust instead of a crumbly mess. I got out close to a half cup of water. (Again if read Tip 1 you will know what did with that. It is full of nutrition and flavour so it definitely did not go down my drain.
Placed rung out cauliflower into a bowl. Now add 1/4 cup parmesan cheese, 1/4 cup mozzarella cheese, 1/4 teaspoon sea salt, 1/2 teaspoon dried basil (crush up the leaves even more between your fingers before adding), 1/2 teaspoon dried oregano (crush up the leaves even more between your fingers before adding), 1/2 teaspoon garlic powder (not garlic salt), and a dash of red pepper if you want. I also added 1 tablespoon spelt flour because my cauliflower yielded closer to 2 cups of cauli snow, this is optional and I would not add the if you have closer to 3 cups of cauliflower. Now add your egg and mix away. Hands tend to work best.

Once mixed together, use your hands to form the dough into a crust on your oiled parchment paper. Pat it down thoroughly, you want it nice and tightly formed together. Don't make it too thick or thin either.

Using a cutting board slide the parchment paper onto your hot pizza stone or baking sheet in the oven. Bake for 9 - 14 minutes, until it starts to turn golden brown. Leave it in longer if it is not golden. Remove from oven.

Add however much sauce, cheese, and toppings you want. Slide parchment with topped pizza back in the hot oven and cook for another 7 to 10 minutes until the cheese is melted, bubbly, and slightly golden

Let rest for a couple of minutes. Then using a pizza cutter and a spatula serve up your delicious grain-free cauliflower crust pizza!

Everyone has their own taste for ingredients – so go for it. I was going to make pizza sauce from scratch, but with my real estate and yoga today I didn’t have time. I opted for Organic Eden Brand Sauce.

Healthy Homemade Ketchup + BBQ Sauce




Healthy Homemade Crock Pot Ketchup/BBQ Sauce (NO PROCESSED WHITE SUGAR)
This recipe is absolutely delicious and tastes even better than processed Ketchup.
I emptied a bottle of ketchup, used a funnel to fill a bottle with my ketchup, then used the balance in the crock pot to make healthy BBQ sauce.
Ingredients
1 (28 oz) can organic tomato puree (I try to by Eden brand for canned – it is BPA free)
2 small cans organic tomato paste
1 small onion, chopped
1/2 cup apple cider vinegar (use good quality such as Braggs)
3 tablespoons raw, organic honey
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground red pepper
sea salt to taste
fresh ground black pepper to taste
Instructions
Place all ingredients into medium sized crock pot. Stir well. Cover and turn on high for 2 – 2 1/2 hours, stirring occasionally. Remove the lid and puree with an immersion blender, or use a food processer to blend until smooth. Cook in crock pot for another ½ hour or so, until thick in consistency.
Cool and transfer to storage container, leaving about 1 – 1 ½ cups in the crock pot .


Healthy Homemade BBQ Sauce
Ingredients
Remaining ketchup in crock pot (1 – 1 ½ cups)

1 can organic tomato paste
1 cup organic apple cider or apple juice
2 tablespoons organic molasses
2 tablespoons cider vinegar
1 tablespoon raw, organic honey
1 tablespoon maple syrup
2 tablespoons, dry yellow mustard
¼ teaspoon cayenne papper
Ground black pepper to taste
1 tablespoon chili powder
Instructions
Place all ingredients in crock pot, stir well. Cover and cook on high for about 1 hour. Stir well, adjust taste as needed. Cook for another ½ to 1 hour with lid off until sauce thickens.
Pour into storage container. The best BBQ Sauce you have ever had and it is all healthy!

Granola Bars Gluten and Dairy Free

GRANOLA BARS
GLUTEN AND DAIRY FREE

These are great for breakfast on the go or for an afternoon pick me up.
2 cups gluten free oats
1/2 cup raw sunflower seeds
1/2 cup ground flax seed or hemp hearts
1/2 cup shredded unsweetened coconut
1/4 teaspoon sea salt
1/4 teaspoon ground cinnamon
¼ teaspoon nutmeg
3/4 cup raw organic honey
1/2 cup organic coconut oil, plus 1 teaspoon for pan
1 teaspoon organic natural vanilla extract
1 cup dried fruit (blueberries, cranberries are a great mix) or chocolate chips (use gluten free/dairy free as needed)









Preheat oven to 300 degrees. Coat an 8×12 baking dish with 1 teaspoon of the coconut oil, then line with parchment paper. Set aside.

In a food processor mix together the oats, flax seed, sunflower seeds, coconut, salt, and cinnamon. Process for about 30 seconds, or until very finely chopped. (If you don’t have a food processer, use a Pampered Chef Magic Food Processer – I love mine! Pour mixture into a large mixing bowl and set aside.

Place honey, coconut oil, and vanilla in a sauce pan over medium heat. Stir until melted together, about 1 minute.

Pour honey mixture into the bowl with the dry ingredients. Stir in the dried fruit or chocolate chips. Stir mixture well until coated well. If mixture seems too dry add 1 -2 more Tablespoons of honey or agave.
Spread evenly into prepared baking dish pressing down firmly. Bake for 20-25 minutes, or until golden brown on top and edges. Place on a wire rack to cool for 30 minutes before cutting into bars. If the bars are too crumbly to cut, let cool a little longer before cutting.

Olive Oil Facts


That olive oil that you love to use because you know it is one of those good for you oils, may not be what you think it is.

A recent study has shown that that Extra Virgin Olive oil may not be what it claims to be. Extra Virgin Olive Oil is time consuming to make, expensive and requires expertise.


In order to bring down the costs many manufactures cut it with Canola oil. 60% of suppliers tested failed when their oils were tested. For instance Bertolli 365 100% Italian Pompeian 84% failed sensory standards and 33% failed chemical standards.

According to Tom Mueller, author of Extra Virginity—the 2011 book detailing an olive oil controversy—people are buying oils that are sometimes just a notch above lamp oil. Gross. “This stuff isn’t wine-geek snobbery,” he says. “How oil tastes and smells is directly correlated to its chemical composition, nutritional, and therapeutic value.” Here’s your guide to buying and enjoying the best olive oil in order to reap its full benefits.




How do you know? Watch the video for details – It is a short video I promise, but worth it. I tried this at home with 2 olive oils I have at home.

I was shocked – I had purchased ACROPOLIS organics in the Health Section of the grocery store.

I had purchased a bottle that Sarafino imports called OLEARA SAN GIORDIO – Aspro Olive.

I thought they were both superior products until I did the taste test. Poured a little in a shot glass, held one hand on top for a minute, warmed the bottom with the other hand, then tasted. The ACROPOLIS tasted like what I imagine an engine oil would taste like.



The OLEARA SAN GIORDIO brand, was light, and left no oily feeling in my mouth.

In Sault Ste Marie, you can purchase OLEARA SAN GIORDIO in The Country Way on Brock St. Once you do, you will never want the other kinds.


I really am shocked at the difference and my salad dressings taste better than ever!
